Hot drinks for cold winter nights

On November 14, I was invited to a tasting of some new hot seasonal drinks with Irish whiskey Tullamore Dew. Bartenders Ray McIntosh (Liquid Management) and Antonio Alvarez had prepared three big copper pots with each libation, and in addition to tasting them, the guests were also given some general suggestions for making and serving hot drinks - just what we need at the moment in the very cold and snowy Stockholm.

According to Ray and Antonio, when making hot drinks it's important to use a smooth whiskey, and that's why they would choose Irish over Scotch - but remember that the choice of base spirit has a big effect on the final result, so make sure you first decide how you want the drink to taste. Don't try to hide the base spirit - instead, identify its characteristics and try to enhance and support them when adding more ingredients. Don't forget to try the drink when it's hot as the flavours become more intense. Last but not least - balance is crucial!

The following recipes were made by Ray and Antonio with simplicity in mind, and are suitable for large batches - just multiply the measurements with the number of guests.

Bitter Dew
Inspired by the traditional Swedish Glögg.

50 ml Tullamore Dew
10 ml Svensk Flaggpunsch
50 ml Gastronomigruppen Äppelmust Ingrid Marie
1-2 dashes Angostura Bitters
Yellow and black raisins soaked in Tullamore Dew
Lightly roasted apricot
Star anise fruit

Put raisins and apricot in the bottom of a champagne flute. Heat the whiskey, punsch, äppelmust and bitters in a. Pour into the champagne flute and float a star anise fruit.

Foggy Dew
Foggy Dew
Inspired by the eggnog.

50 ml Tullamore Dew
10 ml honey syrup (dissolve 3 parts honey in 7 parts hot water, let cool)
10 ml ginger syrup
1 whole egg
Saffron
Salt liquorice powder

Heat all ingredients, put them in a blender and blend until fluffy. Pour into a wine glass and garnish with saffron and salt liquorice powder.

Antonio and Ray making Apple Dew

Apple Dew
50 ml Tullamore Dew
75 ml Gastronomigruppen Äppelmust Ingrid Marie
10 ml lemon juice
10 ml orange juice
10 ml maple syrup
Cinnamon

Heat all ingredients together, serve in an Old Fashioned-glass and garnish with a cinnamon stick or ground cinnamon.
