My Beefeater Creative recipes


For the previously mentioned Beefeater Creative cocktail competition, I submitted 3 recipes - one of them - CHA'TAIL (or TEA-TOTALLER) has made it to the final ten, and the winner will be announced on Tuesday January 31. Anyway, if you want to try them out, here are the recipes - enjoy!

CHA'TAIL (or TEA-TOTALLER)
60 ml Beefeater London Dry Gin
22 ml fresh lemon juice
22 ml Earl Grey Deluxe syrup
15 ml egg white
2 cm lemongrass
2 dashes (Scrappy's) lavender bitters

Split the lemongrass in two and muddle. Add the rest of the ingredients and shake without ice to create foam. Add ice cubes and shake again, strain into a chilled cocktail glass. Garnish with a lemon zest and dried juniper berries.

Earl Grey Deluxe syrup
Make a strong tea by adding 3 table spoons of Earl Grey Deluxe to 150 ml of hot water and steep for 10 minutes. While waiting for the tea, make a simple syrup by adding 300 ml demerara sugar to 150 ml of hot water and stir/shake until dissolved. Strain the tea - squeeze as much liquid as possible from the tea leaves - and add it to the simple syrup. Allow to cool.

OLD TOM CALLING
60 ml Beefeater London Dry Gin
30 ml fresh lime juice
15 ml (St Germain) elderflower liqueur
7 ml Old Tom Strong Ale syrup (home made)
7 ml ginger syrup

Shake with ice, strain into old fashioned glass and garnish with ice spears, fresh rosemary, maraschino cherry and candied ginger.

Old Tom Strong Ale syrup
Open a bottle (330 ml) Old Tom Strong Ale and leave until flat. Heat slowly, add 300 ml demerara sugar and stir until dissolved. Remove any foam. Allow to cool, then bottle.

WELLER'S FUGGLE
60 ml Beefeater London Dry Gin
15 ml Fuggle hop syrup
15 ml honey syrup
15 ml fresh lime juice
90 ml Fentiman's tonic water

Fill a double old fashioned-glass with ice, add all ingredients and stir. Garnish with fresh cilantro.

Fuggle hop syrup
Slowly heat 250 ml water, 250 ml demerara sugar and 15 g fresh Fuggle hops, stir and bring to boil. Take away from heat, allow to cool and then remove the hops.
